XANTHAN GUM 50 gr
Also called Xanthan gum, it is a carbohydrate obtained industrially from dextrose fermented by a bacterium of the Xanthomonas family and is presented in the form of a fine powder. Its gelling strength is 100 times greater than gelatine. Nutritionally, it is fat-free, a pure carbohydrate in the form of soluble and indigestible fibre, which absorbs water as it passes through the digestive system. This is why many people use xanthan gum to increase fibre intake in their diets.

INSTRUCTIONS FOR USE:
In juices and beverages: used to add body to fruit drinks and juices. When containing fruit pulp particles, the inclusion of xanthan gum helps to maintain the suspension giving it a better appearance.
Sauces and dressings: to give stability to emulsions, it is widely used in the production of salad dressings.
Confectionery and bakery: used to increase water retention during baking and storage, thus increasing the shelf life of bread, confectionery and refrigerated doughs.
